Catering Services Meal Servings are categorized into four (4) clusters they are the breakfast service, lunch service, dinner service and the supper service.
I will tell you the skills required for the catering food and beverage services on customers based on the meal period that is requested and quoted.
The characteristics and role is very important as they demonstrate professionalism and knowledge on different food and drinks to be served. Since Filipinos are known for their three day meal, including the three in-between meals, this might give us hint on what food is specifically preferred by their guests in catering business and service.
The breakfast meal service is held in the morning between 6:00 am till 10:00 am (including the preparation and cooking) where the peaking time is 7:00 am to 9:00 am. Initially for the purpose of giving options to the customers, the “full breakfast” service has all the kinds of food a typical customer wants. It includes fruit, fruit juices, cereals, bakery products such as toasts/bread, pastries and muffins and hot beverages (coffee, tea and milk).
For high end customers and health conscious clients, we could provide “continental breakfast” service which usually include of light meal cuisines and food such as fruit juice, hot beverages (tea and milk), bakery items and crackers, and conserves. Another adapted concept of meal is the “English breakfast” service where it consist the typical breakfast meal of monarchies such as sausage, mushroom, bacon, and eggs complimented by fruits, fruit juices, cereals, toasts with jams or marmalade, and coffee or tea. Lastly is the “American breakfast” service that consists of certain pancakes/waffles with honey or maple syrup, eggs and sausages and of course hot chocolate or coffee.
Furthermore, the lunch service is usually taken from 10:00 am till 3:00 pm with peak time of 11:00am – 2:00 pm. People would prefer it to be light than the dinner or supper meals. For catering service, one of the appropriate services would be buffet to allow the customers to choose their food depending on their ocular view and the aroma of the food. However, d’hôte or ả la carte menus can also be provided to guide them on what food will complement each other.
The dinner service is available at night usually from 6:00 pm till 10:00 pm accompanied by cool ambiance of the place. Music could be instrumental and soft to give relaxation and limited menus from two to four courses only that is usually linked to the theme of the restaurant, catering and event.
And the supper service that is offered from 10:00 pm until dawn, has very light meals and famously known as pica-pica foods. The menu may include modified dinner food or bread or toast-based finger food that is passed around in a platter. It is accompanied by wine, champagne or any alcoholic beverages. Hot beverages can also be offered depending on the menu.
